Recipe from our Beach House: Amazing Acai Berry Bowl

We are on a health kick at our Beach House and one of our favorite ways of to wake up in paradise is with our yummy Acai bowl, which features the ‘superfood’ from Brazil – the antioxidant-rich acai berry. An exotic relative of the blueberry and cranberry, it has an array of health benefits including boosting energy, promoting weight loss, aiding digestion and improving mental function.
Acai bowls have a texture like a thick smoothie and can be topped with fruit, nuts, seeds or granola (or any breakfast fixings of your choice). Besides its numerous healing properties, it is a delicious start to the morning – it looks and almost tastes like ice cream but without the guilt.

Ingredients for Berry Smoothie:
1 banana (frozen)
4 oz fresh blackberries
2 oz fresh blueberries
8 oz unflavored Greek yogurt
¼ cup acai powder
Blend all ingredients in a blender until smooth.
Pour into designated bowls or jars and freeze until solid
Ingredients for Berry Bowl Toppings (but feel free to use whatever fixings you prefer):
Chia seeds
Coconut flakes
Fresh kiwi
Homemade granola (recipe below)
Sunflower seeds / Pumpkin seeds
Pistachio (or nut of your preference)
Goji berry
Fresh raspberry (or berry of your preference)
Cocoa nibs / chocolate pearls / or dark chocolate shavings
Granola Recipe for toppings:
5 cups oats
2 cups almonds
2 cups cashews
2 cups coconut flakes
1 cup brown sugar
3/4 cups maple syrup
1/2 cup coconut oil
2 tsp salt
2 cups dried cranberries (or any dry fruit of your choice)
Heat maple syrup and oil and pour over mix
Bake at 225 degrees for 1 hour and 15 minutes
